Janchi Guksu (Korean Warm Noodle Soup)

Janchi Guksu (잔치국수) is a traditional Korean noodle dish often served at celebrations, such as weddings and birthdays. The name "Janchi" means "banquet" or "feast," symbolizing good fortune and happiness. This light yet flavorful noodle soup features thin wheat noodles in a delicate anchovy-kelp broth, topped with simple yet delicious garnishes.

Let's learn how to make this heartwarming dish at home!


🛒 Ingredients (Serves 2) 

For the Broth:

  • 4 cups (1L) water
  • 10 dried anchovies (heads and guts removed)
  • 1 piece dried kelp (about 4-inch square)
  • 1 small onion, sliced
  • 2 cloves garlic, crushed
  • 1 tbsp soy sauce
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp sugar (optional, for balance)

For the Noodles:

  • 200g (7oz) somyeon (thin wheat noodles)
  • 1/2 tbsp cooking oil (optional, for boiling noodles separately)

For Garnish:

  • 1 egg (for egg garnish)
  • 1/2 zucchini, julienned
  • 1/2 carrot, julienned
  • 1 sheet of roasted seaweed (gim), sliced into thin strips
  • 1 green onion, finely chopped
  • Toasted sesame seeds
  • Red chili slices (optional)



👩‍🍳 Instructions 

Step 1: Make the Broth

  1. In a pot, add water, dried anchovies, kelp, onion, and garlic. Bring to a boil.
  2. Once boiling, lower the heat and let it simmer for about 10–15 minutes.
  3. Remove the anchovies and kelp, then season the broth with soy sauce, salt, and sugar (if using). Keep warm on low heat.

Step 2: Prepare the Garnishes

  1. Egg Garnish (Jidan): Separate the egg yolk and white. Lightly beat them separately.
    • Cook each part thinly in a pan over low heat.
    • Let them cool, then slice into thin strips.
  2. Vegetables: Lightly sauté the julienned zucchini and carrot with a pinch of salt until slightly softened.

Step 3: Cook the Noodles

  1. Bring a separate pot of water to a boil.
  2. Add the somyeon noodles and cook according to the package instructions (about 3–4 minutes).
  3. Drain and rinse the noodles under cold water to remove excess starch and keep them from getting too soft.

Step 4: Assemble the Dish

  1. Divide the cooked noodles into serving bowls.
  2. Pour the hot broth over the noodles.
  3. Arrange the egg garnish, zucchini, carrot, seaweed strips, and chopped green onions on top.
  4. Sprinkle with sesame seeds and add red chili slices for extra spice (optional).

Step 5: Serve & Enjoy!

Serve immediately and mix everything together before eating. You can enjoy it as is or pair it with kimchi for a classic Korean meal! ✨
